Fjellbekk is a refreshing spring cocktail with aquavit, lemon, and dandelion syrup. A Norwegian-inspired drink that draws flavors from nature and blooming herbs.

Ingredients

  • 4 cl aquavit
  • 2 cl homemade dandelion syrup
  • 2 cl freshly squeezed lemon juice
  • 6 cl cold soda water
  • Ice cubes
  • Lemon peel and edible flowers for garnish

Instructions

  1. Pick about 2 handfuls of dandelion flowers (only the yellow petals). Avoid green leaves and stems – they can impart a bitter taste.
  2. Rinse the flowers lightly in cold water.
  3. Bring 200 ml of water and 200 g of sugar to a boil with the dandelions for 10 minutes.
  4. Strain out the flower remnants and cool the syrup. Store in the fridge for up to 2 weeks.
  5. Press fresh lemon juice.
  6. Measure out all the ingredients.
  7. Make sure the glass is chilled.
  8. Fill a highball or Collins glass with ice cubes.
  9. Pour in the aquavit, dandelion syrup, and lemon juice.
  10. Stir gently for 10–15 seconds to mix and cool.
  11. Top with cold soda water and stir lightly again.
  12. Garnish with a long lemon peel and some edible flowers, such as violet or pansy.

Fjellbekk is a refreshing drink made with aquavit, lemon, dandelion syrup, and soda water. This is my spring-inspired version, where the spiced notes of aquavit meet tangy citrus, floral sweetness, and fresh bubbles.

The drink is perfect when the first dandelion flowers appear, but it can also be made later if you have syrup stored in the fridge.

What is Fjellbekk?

Fjellbekk comes in several variations. This recipe is made with aquavit, freshly squeezed lemon juice, homemade dandelion syrup, and soda water.

The drink is served in a tall glass filled with ice and garnished with lemon peel or edible flowers. The result is a light and sparkling cocktail with a distinct flavor of citrus, herbs, and flowers.

It works well as an aperitif, a welcome drink, or something refreshing in your glass on warm spring and summer days.

Why use aquavit?

Aquavit is often associated with Christmas food and traditional meals, but it also works well as a base in cocktails. The flavor varies between different types, but caraway, dill, and other herbs and spices are often present.

In this drink, the aquavit adds depth and a spiced character. The lemon contributes fresh acidity, while the dandelion syrup rounds off the flavor with sweetness and mild floral notes.

Feel free to choose an aquavit you already like. A mild variant allows the dandelion syrup to shine through more clearly, while a spicier aquavit gives the drink a bolder character.

Dandelion Syrup – Floral Flavor and Golden Color

Dandelion syrup is made from the yellow petals, sugar, and water. The syrup takes on a golden color and has a mild, floral flavor that pairs well with lemon and aquavit.

Pick dandelions from a place that is not exposed to pesticides, traffic, or other pollution. Only use flowers you are sure you recognize, and remove as much of the green as possible before cooking. Green plant parts can give the syrup a bitter taste.

The syrup can be made in advance and stored in the fridge. In addition to cocktails, it can be used in tea, lemonade, drizzled over pancakes, or as a sweetener in other drinks.

How does Fjellbekk taste?

The lemon provides freshness and acidity, while the dandelion syrup adds sweetness and floral notes. The aquavit gives the drink an herbal and spiced base, and the soda water makes it light and bubbly.

The balance can easily be adjusted to taste. More lemon will give a sharper drink, while a bit more syrup will make it rounder and sweeter.

Serving and Occasions

Serve Fjellbekk in a highball or Collins glass filled with ice. A long lemon peel enhances the citrus aroma and gives the drink a simple and fresh appearance.

Edible flowers can be used as garnish when they are in season. Violet and pansy work well, but only use flowers that are grown or picked for consumption.

Fjellbekk is great as a welcome drink for spring and summer parties, on May 17th, or as a refreshing aperitif before meals.

Tips and Variations

If you don't have dandelion syrup, you can try a mild flower syrup, such as elderflower syrup. The flavor will be different, but the drink will retain its fresh and floral character.

If you want more acidity, you can increase the amount of lemon juice from 2 to 3 cl.

For a drier variant, some of the soda water can be replaced with tonic. If you want to make the drink more festive, you can top it with dry sparkling wine instead of soda water.

A non-alcoholic version can be made with a non-alcoholic botanical alternative, dandelion syrup, lemon, and soda water.

Norwegian Spring in a Glass

This Fjellbekk variant is inspired by the first signs of spring: yellow dandelion flowers, fresh air, and flowing water after winter.

The combination of aquavit, lemon, and dandelion syrup creates a drink that is both easy to make and a bit out of the ordinary. Serve it ice-cold, adjust to your preferred balance, and enjoy spring in a glass.
