Ingredients
- 300 g chicken breast, diced
- 2 tbsp cornstarch (for breading)
- 1 egg, lightly beaten
- Salt and pepper
- 1 red bell pepper, in large pieces
- 1 yellow onion, diced
- 1 small can pineapple chunks (about 200 g with juice)
- 1.5 dl jasmine rice
- 3 tbsp ketchup
- 2 tbsp rice vinegar or white wine vinegar
- 2 tbsp sugar
- 1 tbsp soy sauce
- 1 dl water
- 1 tsp cornstarch mixed in 2 tbsp water (thickener)
Instructions
- Rinse the rice and start cooking according to package instructions.
- Cut the chicken, bell pepper, and onion into pieces.
- Drain the pineapple chunks and set aside.
- Lightly beat the egg and mix with a little salt and pepper.
- Coat the chicken pieces in egg and then in cornstarch.
- Heat oil in a large frying pan (preferably 32 cm) and fry the chicken pieces until golden and cooked through. Set aside.
- Sauté the onion and bell pepper for a couple of minutes in the same pan. Add the pineapple chunks.
- Mix all the ingredients for the sauce in a small bowl.
- Pour the sauce over the vegetables in the pan and bring to a boil. Stir in the thickener and let it thicken.
- Return the chicken pieces to the pan and toss them well in the sauce.
- Serve with freshly cooked jasmine rice.
