Ingredients

Meat and Spices

  • 400 g ground beef
  • 2 tsp paprika powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp chili powder (or cayenne)
  • 1 tsp salt
  • ½ tsp black pepper

Dressing

  • 3 tbsp crème fraîche
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar or lime juice
  • ½ tsp honey
  • ½ tsp smoked paprika powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne
  • Salt and pepper to taste

For Assembly

  • 4 small taco lomper
  • 1 dl grated light cheese
  • 1 heart lettuce, finely shredded
  • ¼ red onion, finely chopped
  • Fresh cilantro (optional)

Instructions

  2. Mix all the spices for the meat in a small bowl.
  3. Stir together the ingredients for the dressing. Season with salt and pepper, and refrigerate.
  4. Shred the heart lettuce and finely chop the red onion. Grate the cheese if it is not pre-grated.
  5. Divide the ground beef into 4 equal portions and loosely form into balls – do not flatten them yet.
  6. Preheat a steel pan (32 cm) on high heat for 2–3 minutes until it is very hot.

  8. Place a meatball in the pan and lay a lompe on top. Use a spatula to press the meat flat under the lompe. Let it cook for about 2 minutes without moving it.
  9. Flip the entire taco and sprinkle cheese on the cooked meat side. Cook for another 1–2 minutes until the cheese melts and the lomper are golden and crispy.
  10. Remove from the pan and place on a plate. Repeat with the remaining.
  11. Top with heart lettuce, red onion, dressing, and cilantro. Fold gently and serve immediately.
