Crispy Tortilla Wraps with Ground Chicken and Panko

I saw the idea on Instagram and had to try it myself. Tortilla wraps, seasoned ground chicken, and panko turn into crispy triangles with juicy meat and a simple, spicy crème fraîche dip.

Ingredients
- 2 large or 4 small tortilla wraps
- 400 g ground chicken
- 1 tsp salt
- ½ tsp coarsely ground black pepper
- 1 tsp paprika powder
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp chili powder
- ½ tsp ground cumin
- ¼ tsp cayenne pepper
Coating
- 4 tbsp flour
- 3 eggs
- 150 g panko
- ½ tsp paprika powder
- ¼ tsp garlic powder
- ¼ tsp salt
For frying
- Neutral oil for frying
Instructions
- Spread about 200 g of ground chicken on each large tortilla wrap, or 100 g on each small one. Press the meat well into a thin and even layer.
- Cut each wrap into four triangles.
- Carefully coat the triangles first in the seasoned flour, then in the egg, and finally in the panko.
- Fry a few at a time in the oil until golden brown and crispy on both sides. Keep an eye on the temperature throughout. Ensure the chicken is fully cooked, preferably with a core temperature of 75 °C.
- Let them drain on a rack or paper towels, preferably with the meat side up.
- Mix crème fraîche with hot sauce, salt, and pepper, and serve the dip on the side.
Mise en place
Mix the ground chicken well with salt, pepper, paprika powder, garlic powder, onion powder, chili powder, cumin, and cayenne pepper.
Whisk the eggs together.
Combine the flour with paprika powder, garlic powder, and salt. Place the flour mixture and panko in separate bowls.
Heat 1–2 cm of oil to 170–180 °C.
Flavor Profile
Very crispy on the outside and juicy on the inside, with a distinct flavor of paprika, garlic, and onion. Chili powder, cumin, and cayenne pepper add warmth and depth, while the tangy and spicy crème fraîche dip balances the fried coating.
Serving Suggestions
Serve warm with the hot sauce dip and a simple salad. They work well as finger food, snacks, or a light meal.
A Simple Idea with Clear Contrast
This recipe combines soft tortilla wraps, seasoned ground chicken, and crispy panko. The ground chicken is spread in a thin, even layer directly on the wraps. Then they are cut into triangles, breaded, and pan-fried. When the thickness is even, the chicken cooks through while the coating gets a golden surface.
It’s the contrast that makes the dish interesting. The panko provides a distinct crunch, the tortilla wrap holds the filling together, and the ground chicken remains juicy when not applied too thickly. The triangles work as snacks and finger food but can also become a meal with salad and dip on the side.
Seasoning for More Flavor
Ground chicken is mild and needs clear seasoning. Paprika powder provides a rounded base flavor, while garlic powder and onion powder add more body without adding moisture. A little ground cumin adds depth, but the amount is kept low so the dish doesn’t taste like regular tacos. The cayenne pepper adds mild heat. If you want more spice, it’s better to serve a strong dip than to increase the amount the first time.
Mix the spices well into the ground chicken before spreading it on the wraps. This ensures an even flavor in every bite. Spread the meat all the way to the edges, but keep a thin layer. A thick layer takes longer to cook and increases the risk of the coating becoming too dark before the chicken is fully cooked.
How to Make the Coating Stick
The coating is built in three steps: flour, egg, and panko. The flour gives the egg something to stick to, and the egg binds the panko to the surface. Coat each triangle well in all three layers, and gently press the panko in place. Shake off any loose crumbs before placing the pieces in the oil. This minimizes the amount of coating that can burn in the pan between frying rounds.
Finish all the breading before you start frying. This way, you can monitor the oil temperature and the chicken without switching between raw meat, breading, and hot oil. It’s helpful to use one hand for the dry ingredients and one hand for the egg. This makes the process less messy.
Correct Temperature for Frying
Add about one to two centimeters of neutral oil to a frying pan and heat it to 170–175 °C. At this temperature, the panko becomes golden without absorbing too much oil. If the oil is too cold, the coating quickly becomes heavy and greasy. If it’s too hot, the outside can darken before the chicken is cooked through.
Fry only a few triangles at a time. Too many pieces lower the temperature of the oil and make it harder to achieve an even result. Fry them for about two to three minutes on each side, depending on the thickness. The ground chicken should be fully cooked. The safest check is a meat thermometer that shows 75 °C in the meat.
Place the finished pieces on a rack or paper towels. A rack allows steam to escape from the bottom and preserves the crispiness best. Remove any loose, dark panko crumbs from the oil between each round if frying many pieces.
Serving and Accompaniments
Serve the triangles while they are warm and crispy. Chili mayonnaise is great if you want more heat, while garlic dressing provides a milder contrast. Sriracha mayonnaise adds both acidity and heat, and sweet chili sauce adds sweetness. A fresh salad with a tangy dressing balances the fried coating and makes the dish more suitable as a dinner.
The recipe yields two large or four small tortilla wraps for two people. In the test, I used 200 grams of meat on one large wrap and cut it into four triangles. As finger food, they can be served on a platter with various dips. If served as a meal, a simple salad on the side works well.
The Dip from the Video
In the video, I mixed about half a tub of crème fraîche with my own hot sauce, salt, and pepper. It became a rich and spicy dip that paired very well with the crispy coating. If you don’t have hot sauce, you can use a bit of apple cider vinegar and cayenne pepper along with salt and pepper.
