Maintaining a Wooden Cutting Board!
Published: 27.11.2025
A well-maintained wooden cutting board can last for decades. By using food-safe paraffin oil, you protect the board from water damage, cracks, odors, and discoloration. This makes it both more hygienic and aesthetically pleasing, and is a method used in both restaurant kitchens and at home.

⚠️ Important:
Use only food-safe paraffin oil. Avoid olive oil, canola oil, and sunflower oil – these can go rancid, smell bad, and make the board sticky and unhygienic.
History:
The use of wood as a material for kitchen utensils dates back thousands of years, and oiling boards was a necessity long before modern kitchen tools existed. In earlier times, animal fat, linseed oil, or beeswax were commonly used. In the 20th century, paraffin oil became popular for this purpose due to its neutrality, stability, and ability to penetrate deeply into the wood. Today, this is the preferred method for extending the lifespan of wooden boards without affecting the taste of food.
Ingredients:
- 1 clean and completely dry wooden cutting board
- 1 soft lint-free cloth or paper towel
- Food-safe paraffin oil
Instructions (mise en place):
- Prepare the board: Wash and dry the board thoroughly – it must be completely dry for the oil to absorb effectively.
- Apply oil: Pour 1 teaspoon of paraffin oil onto the surface and spread it evenly. Do this for both sides and the edges.
- Massage in: Use the cloth or paper towel to work the oil in with small circular motions.
- Let it absorb: Allow the board to sit for 20–30 minutes.
- Wipe off excess: Wipe away any excess oil with a clean, dry cloth.
- Repeat as needed: Repeat the process if the board is very dry or new.
- Proper storage: Let the board dry standing in a well-ventilated area.
Summary:
Maintaining wooden cutting boards is essential for both hygiene and aesthetics in the kitchen. By using food-safe paraffin oil, you prevent the board from cracking, absorbing odors, or becoming discolored. It is important to use the oil correctly: the board must be completely dry, the oil must be well distributed, and excess oil must be wiped off after absorption. A well-oiled board will have a beautiful sheen, a water-repellent surface, and will last much longer. This simple maintenance is suitable for both home cooks and professional kitchens.
