Instructions (mise en place):
Mise en place: Boil water for the pasta, grate the parmesan, lightly toast the pine nuts in a dry pan, and cut the chicken into pieces.
Place all the ingredients for the pesto in a food processor or use an immersion blender.
Blend until smooth. Adjust with a little extra oil if needed.
Cook the pasta according to the package instructions.
Save a bit of pasta water before draining.
Heat a 24 cm steel pan with olive oil over medium-high heat.
Sear the chicken until it has a nice crust and is cooked through.
Add the pasta to the pan with the chicken.
Stir in the pesto and 2 to 3 tbsp of pasta water.
Toss everything together until the pasta is creamy and glossy.
Serve immediately with extra parmesan and fresh basil.
