Ingredients
Fish and chips
- 2 cod fillets (about 150–180 g each), skinless and boneless
- 3 large potatoes (preferably starchy, like almond potatoes or King Edward)

Tartar sauce
- 4 tbsp mayonnaise
- 1 tbsp finely chopped pickles
- 1 tsp capers, chopped
- 1 tsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper

- - Peel the potatoes and cut them into sticks (about 1 cm thick), rinse in cold water, dry well, and set aside.
- - Cut the fish fillets in half if desired for smaller pieces.
- - Make the tartar sauce: Mix all the ingredients and chill.
- - Batter: Sift flour, baking powder, and salt into a bowl. Stir in mustard and ice-cold water/beer until you have a thick, flowing batter. Chill.
- 2. Pre-cook the potatoes:
- - Heat the oil to 140 °C in a large cast-iron pot or saucepan.
- - Fry the potato sticks for 5–6 minutes until they are soft but not golden.
- - Remove and place on a rack or paper towel.
- 3. Fry the fish:
- - Increase the temperature to 180 °C.
- - Pat the fish dry, coat in all-purpose flour, and shake off excess flour.
- - Dip in the batter and carefully place in the oil.
- - Fry for 5–6 minutes until crispy and golden.
- - Place on a rack and sprinkle with a little salt immediately.
- 4. Crispy fries:
- - Increase the temperature to 190 °C.
- - Fry the potatoes for 2–3 minutes until golden and crispy.
- - Sprinkle with a little salt.

- - Serve the fish and chips with tartar sauce, lemon wedges, and optionally pea puree.
