Ingredients
Meat and Spices
- 400 g ground beef
- 2 tsp paprika powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried oregano
- ½ tsp chili powder (or cayenne)
- 1 tsp salt
- ½ tsp black pepper
Dressing
- 3 tbsp crème fraîche
- 1 tsp Dijon mustard
- 1 tsp apple cider vinegar or lime juice
- ½ tsp honey
- ½ tsp smoked paprika powder
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp cayenne
- Salt and pepper to taste
For Assembly
- 4 small taco lomper
- 1 dl grated light cheese
- 1 heart lettuce, finely shredded
- ¼ red onion, finely chopped
- Fresh cilantro (optional)
Instructions
- Mix all the spices for the meat in a small bowl.
- Stir together the dressing ingredients. Season with salt and pepper, and chill.
- Shred the heart lettuce and finely chop the red onion. Grate the cheese if it's not pre-grated.
- Divide the ground beef into 4 equal portions and loosely form into balls – do not flatten them yet.
- Preheat a steel pan (32 cm) on high heat for 2–3 minutes until it is blazing hot.
- Place a meatball in the pan and lay a lompe over it. Use a spatula to press the meat flat under the lompe. Let it cook for about 2 minutes without stirring.
- Flip the entire taco and sprinkle cheese on the cooked meat side. Cook for another 1–2 minutes until the cheese melts and the lomper are golden and crispy.
- Remove from the pan and place on a plate. Repeat with the remaining.
- Top with heart lettuce, red onion, dressing, and cilantro. Fold gently and serve immediately.
